When Julia Child moved to the City of Light with her husband, Paul, in 1948, she discovered French cuisine—an experience that not only kindled her palate but also ignited a dream for mastering the art of gourmet fare. In our May/June 2019 issue, we trace the legendary cookbook author and television host’s footsteps through Paris, pausing at bistros and markets the couple frequented during their tenure. Following this inspiration, chefs in the Victoria test kitchens offer three recipes based on signature specialties Julia encountered over the course of her life-changing culinary journey.
