Ingredients
  1. ½ cup Edible-Flower Compound Butter, softened (recipe follows)
  2. 12 slices pumpernickel bread, crusts removed
  3. 2 English cucumbers, peeled lengthwise into 12 ribbons each
  4. 4 radishes, sliced thin
  5. 1 (4-ounce) package smoked salmon
  6. Microarugula
  7. Garnish: oyster leaf and oyster leaf flowers
Edible-Flower Compound Butter
  1. 2 teaspoons green peppercorns
  2. 2 teaspoons white peppercorns
  3. 2 teaspoons black peppercorns
  4. 1 teaspoon pink peppercorns
  5. 1 pound butter, softened
  6. 2 tablespoons finely chopped fresh chives
  7. 1 tablespoon minced shallot
  8. 2 teaspoons minced garlic
  9. 2 teaspoons finely chopped fresh oregano
  10. Radish flowers
  11. Society garlic flowers
  12. Oyster leaf flowers
Instructions
  1. Spread approximately 2 teaspoons Edible-Flower Compound Butter onto each slice of bread. Cut each slice in half diagonally. Carefully wrap each bread triangle with a cucumber ribbon, crossing ends on top of bread.
  2. Layer 4 radish slices over cucumber ends. Layer a piece of smoked salmon onto each sandwich, and top with a piece of microarugula. Garnish with oyster leaf and flowers, if desired. Serve immediately.
Edible-Flower Compound Butter
  1. In a coffee grinder or using a mortar and pestle, grind green, white, black, and pink peppercorns until crushed.
  2. In a medium bowl, beat butter with a mixer at medium-high speed until smooth. Add peppercorns, chives, shallot, garlic, and oregano. Beat at medium speed until combined.
  3. Transfer from mixer to parchment paper. Form butter into a log. Press radish flowers, garlic flowers, and oyster leaf flowers onto log. Roll in parchment, and twist at both ends. Refrigerate for at least 2 hours.
  4. To serve, cut into ÂĽ-inch slices. Store in refrigerator for up to 3 days.

  1. The recipe for the compound butter butter sandwiches says to serve immediately, what does that mean? Will it be all right served in a half an hour or an hour?

    • Hi Barbara, thank you for reaching out to us. The recipe advises to serve immediately due to the nature of the ingredients. I believe you should be fine to serve an hour later, but would keep the sandwiches refrigerated before serving.
