

Spiced Apple Cider

Ingredients
- 8 cups apple juice
- 1 medium apple, sliced
- 1 vanilla bean, split lengthwise
- 1/4 cup honey
- 1/4 cup maple syrup
- 3 cardamom pods
- 3 whole allspice berries
- 3 whole cloves
- 2 cinnamon sticks, broken into 1-inch pieces
- 1 star anise
- Peel of 1 orange
- Peel of 1 lemon
- 1 recipe Baked Apple Chips
Instructions
- In a large stockpot over medium heat, combine the apple juice, apple slices, vanilla bean, honey, and maple syrup. In a sachet bag or a piece of cheesecloth, combine the cardamom pods, allspice berries, cloves, cinnamon stick pieces, anise, and orange and lemon peels. If using cheesecloth, tie it into a bundle using kitchen twine.
- Place the spice bag into the juice mixture, and cook for 10 minutes, until hot but not boiling. Remove cider from heat, and discard spice bag. Serve immediately, or refrigerate for up to 1 week. Garnish with Baked Apple Chips, if desired.
