Sparkling Pink Grapefruit Cocktail

This Sparkling Pink Grapefruit Cocktail is a fresh and delicious drink perfect for your next spring gathering.

Sparkling Pink Grapefruit Cocktail
Makes 1 drink
  • Ice cubes
  • ¼ cup pink grapefruit juice
  • 3 tablespoons Basil Simple Syrup (recipe follows)
  • 1½ ounces Campari
  • ½ ounce St-Germain
  • 2 ounces chilled sparkling wine
  1. Fill a cocktail shaker halfway with ice. Add grapefruit juice, Basil Simple Syrup, Campari, and St-Germain. Shake vigorously. Strain mixture into a goblet. Top with sparkling wine. Serve immediately.

Basil Simple Syrup
Makes 1½ cups
  • 1 cup water
  • 1 cup granulated sugar
  • ¼ cup fresh basil leaves
  1. In a small saucepan, combine 1 cup water and sugar over medium-high heat. Bring mixture to a boil, stirring constantly; reduce heat to low, and simmer, stirring constantly, until sugar is dissolved, 3 to 4 minutes.
  2. Remove from heat, and add basil. Let stand for at least 10 minutes. (The flavor will intensify the longer the basil steeps.) 3. Strain mixture through a fine-mesh sieve into an airtight container, and refrigerate for up to 3 weeks.
