Roasted Citrus-Herbed Chicken, served atop a bed of tender baby Dutch yellow potatoes, becomes the mouthwatering centerpiece of any meal. Traditional seasonings ensure the comfort- food status of the poultry, while grapefruit adds a note of intrigue.

Roasted Citrus-Herbed Chicken
 
Ingredients
  • 1⁄2 cup unsalted butter, softened 4 garlic cloves, minced
  • 2 tablespoons chopped fresh mint 2 tablespoons minced fresh basil 2 tablespoons minced fresh dill
  • 1 tablespoon grapefruit zest Salt
  • Ground pepper
  • 1 (4-pound) whole chicken
  • 1 sprig basil
  • 1 sprig dill
  • 2 ruby-red grapefruit, sectioned into eighths, divided
  • Roasted Potatoes (recipe follows)
Instructions
  1. Position oven rack to lower third of oven, and preheat oven to 425°. Line a large roasting pan with foil.
  2. In a small bowl, mix butter with garlic, mint, basil, dill, and grapefruit zest. Season with salt and pepper.
  3. Discard giblets, and pat chicken dry. Gently loosen skin from bird, keeping skin intact. Rub butter mixture under skin and over meat. Place basil and dill sprigs under skin. Place bird, breast side up, in prepared pan. Place 8 grapefruit segments inside cavity of chicken and remaining 8 grapefruit segments around chicken. Bake, shielding with foil to prevent overbrowning, until meat thermometer inserted in thickest portion registers 165°, about 1 hour and 15 minutes. Serve chicken with Roasted Potatoes.

Roasted Potatoes
 
Ingredients
  • 1 (1.5-pound) bag baby Dutch yellow potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1⁄2 teaspoon ground black pepper
Instructions
  1. Wash and dry potatoes. Cut each potato in half.
  2. Preheat oven to 450°. Line a rimmed baking sheet with foil; spray with cooking spray.
  3. In a large bowl, toss together potatoes, olive oil, salt, and pepper. Arrange potatoes in a single layer on prepared baking sheet. Bake for 45 minutes, turn- ing potatoes halfway through baking. Serve with Citrus-Herbed Chicken.
