Lessons in the Art of Irish Cooking

Set amid the peaceful countryside of Shanagarry, County Cork, Ireland, the internationally acclaimed Ballymaloe Cookery School was founded by Darina and Tim Allen, along with Darina’s brother Rory O’Connell, in 1983. Since that time, the institution has influenced scores of Irish bakers and chefs, cementing the Ballymaloe name in the island’s culinary heritage. Among the property’s features are a 100-acre organic garden, the formal Celtic Maze, and an herb garden inspired by the vegetable plots at Villandry Palace in the Loire Valley. Darina’s buoyant personality makes every lesson pure joy, whether she’s teaching students to make scones the way her mother taught her or explaining, only half in jest, why they have to let the fairies out of their soda bread.
