
Each April, just as the azaleas are bursting into bloom, the Augusta National Golf Club in Augusta, Georgia, rolls out not a red carpet but a green one to welcome the world to the Masters Tournament. This time-honored event is a favorite not only of sports fans but of anyone who respects tradition and appreciates the beauty of springtime in the South. On the final day of the tournament, the golfer who manages to conquer the course and top his fellow competitors is awarded the coveted green jacket—the inspiration for this fresh-as-a-spring-breeze salad. In celebration of the Masters—and indeed, of the season itself—serve this dish at an alfresco meal, hosted in a garden brimming with flowers.


- 1 (6-ounce) package of baby spinach, stems removed
- 1 small head green-leave lettuce, chopped
- 2 (14-ounce) cans hearts of palm, drained and sliced
- 1 (12-ounce) container gourmet-medley tomatoes, halved
- 12 pieces hickory-smoked bacon, cooked and crumbled
- 1 (4-ounce) container goat cheese crumbles
- Makes approximately 2 cups
- 1 cup white-wine vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 3/4 cup extra-light olive oil
- On each of 6 dinner plates, evenly divide spinach and lettuce. Top with hearts of palm, tomatoes, bacon, and cheese. Drizzle with White-Wine Vinaigrette just before serving.
- In a small bowl, combine vinegar, mustard, sugar, salt, garlic powder, and pepper, whisking until sugar dissolves. Gradually add olive oil in a slow, steady stream, whisking well to combine.
